Chocolate Quinoa Muffins/Cupcakes

When you are cooking your quinoa for this recipe I find it triples from dry to cooked. If you cook 3/4 cup of dry quinoa you will have enough plus aprox. 1/4 cup left over. I rinse my quinoa before cooking (even if it says pre rinsed), drain, and add I do a 1:2 quinoa to water ratio.

Ingredients:

2 cups cooked quinoa

1 cup liquid honey, warm up crystallized honey before measuring

1/3 cup water, milk or milk alternative

4 eggs

1/2 cup vegan butter, margarine or butter

1/4 cup melted coconut oil

1 cup cocoa powder

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 tsp vanilla

Directions:

  1. In a bowl combine 2 cups cooked quinoa, 1/3 cup liquid of your choice, 1/2 cup butter/butter alternative and 1/4 cup coconut oil. Blend with a hand blender or blend in a blender.

  2. Add eggs and mix or blend

  3. Add 1 cup cocoa powder, 1 1/2 tspbaking powder, 1/2 tsp baking soda, and 1/2 tsp salt. Mix well. Add 1 tsp vanilla combine.

  4. Divide the batter in 24 lined muffin tins.

  5. Bake at 350 degreed Fahrenheit for 20-25 mins.

  6. Let cool and enjoy!
