Coconut Chocolate Square- Keto, Gluten Free

Ingredients
1 can of full fat coconut milk
2 Tbsp of monk fruit sweetener ( I use lakanto or krisda brand)
1 tsp vanilla
3 cups unsweetened shredded coconut
1/4 cup coconut oil
8 oz unsweetened bakers chocolate
2 tbsp of cocoa butter or coconut oil
1 tbsp powdered monk fruit sweetener

Instructions
1. In a sauce pan over medium heat add a can of full fat coconut milk and 2 tbsp of monk fruit sweetener, stir to dissolve the sweetener. Bring to a simmer, simmer for 20 mins stirring occasionally.
2. Remove from heat, Stir in 1 tsp of vanilla and 1/4 cup of coconut oil .
3. Add 3 cups of unsweetened shredded coconut, mix well. While still warm put the coconut mixture into a counter that is about 9 x9 ", smooth out the top. Cover and put in the fridge for at least an hour.
4. Chop up 1/2 a box of unsweetened bakers chocolate and 2 tbsp of cocoa butter. (you can use coconut oil if you cant find it). Put in a microwavable bowl or measuring cup. Melt in the microwave, heat for 20 seconds, stir, heat for 20 second, stir. Repeat until it is all melted. Add 1 tbsp of powdered monk fruit (you can make your own by blending 1 cup of granulated monk fruit in a blender, you can make more at once but I find you need at least 1 cup to blend up properly). stir well
5. Pour the chocolate over the coconut and place in the fridge for 15 mins. Take out of the fridge, cut into squares. Place back in the fridge for 20 mins to fully harden the chocolate.
6. Store squares in the fridge.
