Flatbread or Wrap- Gluten Free, Paleo, Keto

Soft and flexible flatbread or wrap that fits into a gluten free diet, keto, vegan and paleo diet. I like to make a batch of these and keep them in the fridge.

Ingredients

1/4 cup coconut flour
1 tbsp. psyllium husk
1/4 tsp baking powder
pinch of salt
1-1/2 cup of water (will depend on the brands of coconut flour and the humidity in your area)

Directions

1- In a bowl combine 1/4 cup coconut flour, 1 tbsp. psyllium husk, 1/4 tsp baking powder, a pinch of salt, 1 1/4-1/2 cup of water. Let sit for 10-20 mins.
2- Between 2 pieces of parchment paper or plastic wrap flatten a ball of dough. I like to use about 1/4 cup of dough per wrap. Flatten it to be about 1/4 inch thick, you can make them thicker if you would like.
3- Put about 1/4 tsp of coconut oil or other oil of your choice in a pan over medium low heat.
4- Flip the wrap onto the pan and cook for a few minutes (3-5 depending on size and temp of your pan). If it comes off the pan easily with a spatula its ready to flip. If not let it cook a bit longer (1-2 mins).
5- Flip the wrap over and cook on the other side. Remove from the pan when its golden brown. Let cool.
