Gluten and Dairy Free Corn Dog Recipe - With bonus Cinnamon Sugar Fritters

Ingredients

1/2 cup corn flour (not cornmeal)
1/4 cup white rice flour
1/4 cup corn starch
1/4 tsp xanthan gum
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 egg
1 cup water
1/4 cup corn starch
9 hot dogs (when making the full corndog recipe, use less if you are making fritters as well)
Oil for frying

For the fritters
1/4 cup sugar
1 tsp cinnamon

Ingredients

  1. In a bowl combine corn flour, rice flour, 1/4 cup corn starch, xanthun gum, sugar, baking powder, salt.

  2. Add 1 cup water and 1 egg. Mix well. Set asside

  3. Add 1/4 cup corn starch to a bowl, coat the hot dogs with the corn starch.

  4. Dip the hot dogs in the batter and fry in 2" of oil until golden, flip, fry until golden, and place on a paper towl covered plate. Don't over crowd the pan, I do about 3 at a time.

  5. Continue step 4 until all the hot dogs are cooked.

Cinnamon Sugar Fritters
Made with the left over batter (or you could do this with all the batter if you wanted, they are VERY yummy)

  1. Spoon about 1 tbsp of batter into the hot oil.

  2. Once the bottom is golden, flip and cook the other side.

  3. When both sides are golden remove from the oil and place on a paper towel covered plate.

  4. When they are still warm coat them with cinnamon sugar. You dont need to follow the recipe exatcly, but I use 1 tsp of cinnamon for every 1/4 cup of sugar.
