Gluten Free Baked Caramel Popcorn Recipe

Ingredients
24 cups air popped popcorn
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1 tsp salt
1/2 tsp baking soda
1 tsp vanilla
Instructions
In a pot on medium heat melt the butter, then add the brown sugar and corn syrup.
Stir continually until the mixture is boiling.
Let boil for 5 mins, stirring often to prevent the bottom from burning.
Remove from the heat and add the vanilla and the baking soda.
Stir until they are incorporated and pour over the popcorn.Mix and pour onto a baking sheet.
Bake at 250 degrees Fahrenheit for a total of 1 hour. You will need to stir and mix the popcorn around every 15 mins.
Remove from the oven and let cool.
Store in a air tight container or bag, if you don't eat it within a few days you can freeze the caramel popcorn.
