Gluten Free Granola Bars- Dairy Free Option.

Ingredients
1/4 cup butter or dairy free butter
1/4 cup honey
1/3 cup brown sugar
1/2 cup gluten free mini marshmallows or cut up large ones
1 tsp vanilla
1 cup gluten free rice krispies or Chex cereal (Canada no longer has GF Rice Krispies)
3 cups gluten free rolled oats
1/2 cup chocolate chips
Instructions
1.In a pot or sauce pan melt the butter, add the brown sugar and honey. Bring to a boil and cook for 3 mins.
2. Remove from the heat and add the marshmallows and vanilla. Combine well.
3. Add the rolled oats and rice krispies, combine.
4. Add 1/2 of the chocolate chips, stir.
5. Press the mixture into a 8"x8" parchment lined pan. Sprinkle the remainder of the chips on top and press into the bars.
6. Let the bars cool for 15 mins, then slice into squares or bars. Let cool completely and enjoy! Cover the pan for storage.
If you cant eat oats then replace them with rice krispies.
