Gluten Free Lemon Loaf

Batter
1/2 cup melted butter
1 cup sugar
2 eggs
zest of 1 lemon
juice of 1 lemon + milk for 1/2 cup total volume
1/8 tsp salt
1 1/2 tsp baking powder
1/4 cup rice flour
1/4 cup tapioca starch
1 cup corn starch
1/2 tsp xanthan gum
Icing
8 tbsp icing sugar
2-3 tsp milk
Instructions
1. In a bowl combine melted butter and sugar.
2. Add 2 eggs and mix well.
3. Add the lemon zest, lemon juice and milk, mix well.
4. Add rice flour, tapioca starch, corn starch, corn starch, baking powder, salt and xanthan gum. Mix well.
5. Pour into lined loaf pan and smooth out the top.
6. Bake in a 350 degree Fahrenheit oven for aprox. 45 mins.
7. Remove from the oven and prepare the icing.
8. In a bowl combine 8 tbsp of icing sugar and 2-3 tsp of milk.
9. Pour icing on warm lemon loaf and let sit until cool.
10.Once the loaf is cool you can remove it from the pan, slice and enjoy.
