Gluten Free Pizza

Ingredients
1/2 cup tapioca starch
1/2 cup brown rice flour
1/2 cup sorghum flour
1/4 cup millet flour
1 1/2 Tbsp psyllium husk
1 1/2 tsp baking powder
1 tsp xanthan gum
1/2 tsp salt
1 1/4 tsp yeast
3/4 cup water
2 1/2 Tbsp oil
1/2 tsp apple cider vinegar

Sauce
2 Tbsp tomato paste
1/2 tsp each, garlic powder, onion powder, oregano, salt
aprox 3 Tbsp of water

Toppings
2 cups grated mozzarella cheese
1 cup grated cheddar cheese
any other topping you might like. I used red pepper and red onion

Instructions
1. In a bowl combine 1/2 cup tapioca starch, 1/2 cup sorghum flour, 1/2 cup brown rice flour, 1/4 cup millet flour, 1 and 1/2 tbsp psyllium husk, 1 and 1/2 tsp baking powder, 1 tsp xanthan gum, 1/2 tsp salt.
2. Add 1 1/4 tsp instant yeast, stir. Add 3/4 cup water, 2 and 1/2 tbsp oil, 1/2 tsp apple cider vinegar. Stir well
3. Divide into 2 sections.
4. On a parchment lined pizza pan flatten the dough into a disk. Cover the dough with plastic wrap and flatten and spread the dough out with a rolling pin. Remove the plastic wrap. Repeat for the other pizza.
5. Bake the crusts for 10-15 mins at 375 degrees Fahrenheit.
6. For the sauce, combine 2 Tbsp tomato paste, 1/2 tsp of each of the following; garlic powder, onion powder, oregano and salt. Add water to the desired consistency, I used about 3 Tbsp.
7. Once the crusts are out of the oven top the them with the pizza sauce.
8. Top the sauce with the grated cheese, feel free to add as little or as much as you want.
9. Add any other toppings you want on your pizza
10. Bake at 425 degrees Fahrenheit for 15 mins or until cheese is melted and slightly browned
