Gluten Free Potato Lefsa

Ingredients
3 cups mashed potato
1/4 cup butter
1/4 tsp salt
1 egg
1/3 cup brown rice flour
1/3 cup potato starch
1/3 cup corn starch
1 tsp xanthan gum
Instructions
1. In a bowl add 3 cups of cooled mashed potatoes, 1/4 cup melted butter and 1 egg. Mix well and make it as smooth as possible
2.Without mixing add, 1/3 cup brown rice flour (take 1 tbsp out), 1/3 cup potato starch (take 1 tbsp out),1/3 cup corn starch (take 1 tbsp out), 1 tsp xanthan gum. Once all are added mix together. Put the 3 tbsps you took out in a bowl.
3.Lay a sheet of parchment on your counter or table, dust with 1 tsp of flour. Grab a ball of dough (about 1/4 cup) and flatten into a disk. Place plastic wrap on top of the dough and roll the disk of dough out to about 1/8 inch thick.
4. Heat up your lefsa griddle or large flat pan. Remove the plastic wrap and flip the dough and parchment onto the griddle, peel back the parchment.
5. Once the bottom is light golden color flip over and cook until the other side is the same colour.
6. Put the lefsa on a tea towel and top with a damp tea towel.
7. Repeat steps 3 to 6 until the dough is gone.
8. Spread softened butter one lefsa, sprinkle with sugar and cinnamon. Roll it up and eat.
9. I make them all up and store in a ziploc bag. I find that they dont roll as well the next day.
