Keto Chocolate Raspberry Muffin Recipe

Ingredients
4 eggs
3 tbsp butter or coconut oil
1 cup coconut milk
1 tsp vanilla
1/2 cup monk fruit sweetener
3/4 cup coconut flour
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
3/4 cup frozen raspberries
Directions
1. In a bowel combine the eggs, melted butter or coconut oil, 1 cup coconut milk, 1 tsp vanilla, 1/2 cup monk fruit sweetener.
2. Add 3/4 cup coconut flour, 1/3 cup cocoa powder, 1 tsp baking soda, 1/4 tsp salt. Whisk until smooth.
3. Add the frozen raspberries and fold in.
4. Scoop the batter into 12 regular sized lined muffin tins.
5. Bake at 350 degrees Fahrenheit for approx. 30 mins.
6. Let cool and enjoy!
