Keto Cinnamon Roll Cake

Ingredients
4 eggs
1/2 cup melted butter
1/4 cup heavy cream
1/4 cup water
1 Tbsp psyllium husk
1 1/2 tsp baking powder
1/2 cup coconut flour
1/3 cup granulated monk fruit sweetener
1 tsp vanilla extract
1/8 tsp salt
1 1/2 tsp cinnamon
2 tsp melted butter
2 tsp heavy
cream
1-2 tsp water
3 Tbsp soft butter
5 Tbsp soft cream cheese
1/3 cup powdered monk fruit sweetener
1 tsp vanilla extract

Instructions
1. Separate the yolks from the whites of the 4 eggs into 2 bowls
2. Beat the egg whites until soft peaks form
3. Add 1/3 cup of granulated monk fruit sweetener to the 4 egg yolks. Beat until the yolks are pale yellow.
4. Add 1 tsp of vanilla extract, 1/2 cup of melted butter, 1/4 cup heavy cream, 1/2 cup water to the yolk mixture.
5. Mix together 1 tbsp psyllium husk, 1/2 cup coconut flour, 1 1/2 tsp baking powder, 1/8 tsp salt, add the mixture to the yolks
6.In a small bowl combine, 1 1/2 tsp cinnamon, 2 tsp melted butter, 2 tsp heavy cream, 1-2 tsp water
7. Add about 1 cup of egg whites into the yolk mixture. Combine (you don't have to be gentle)
8. Add about 1/4 of the egg white to the yolk mixture and fold in. Once mostly incorporated add another 1/4 until the whites are all incorporated.
9. Line the bottom of a spring form pan with parchment paper
10. Spoon about half of the batter in the bottom of the pan.
11. spoon half of the cinnamon mixture on top of the batter in the pan. swirl it into the batter.
12.Spoon the remainder of the batter on top
13.Spoon the rest of the cinnamon mixture and swirl into the batter.
14.Bake in a 350 degree Fahrenheit oven for aprox 30 mins or until a toothpick comes out clean.
15. Beat together 5 tbsp softened cream cheese and 3 tbsp softened butter.
16. Add 1 tsp vanilla and 1/3 powdered monk fruit sweetener. (you can make your own powdered sweetener by blending 1 cup of more of granulated sweetener in a blender)
15.Once the cake is fully cooled run a knife around the edge of the pan and remove the ring.
16. Top the cake with the icing.
17. Cut and enjoy!
