Keto, Paleo Lemon Poppy Seed Muffin

Ingredients
1 cup coconut milk
3 eggs
1/4 cup + 1 tbsp granulated monk fruit sweetener
3/4 cup coconut flour
1/8 tsp salt
1 tsp baking soda
1 tsp apple cider vinegar
1 Tbsp psyllium husk
1 tsp poppy seeds
1 tsp chia seeds
2 tsp lemon zest (zest of 2 lemons)
1 Tbsp lemon juice

Directions

  1. In a bowl combine, 3 eggs, 1/4 cup + 1 tbsp granulated monk fruit sweetener, 1 cup coconut milk,1 tsp apple cider vinegar, 1 Tbsp lemon juice

  2. Add 3/4 cup coconut flour,1/8 tsp salt, 1 tsp baking soda,1 Tbsp psyllium husk,1 tsp poppy seeds,1 tsp chia seeds,2 tsp lemon zest (zest of 2 lemons)

  3. Mix well and let the batter sit for 10 mins.

  4. Scoop batter into lined muffin tins, makes 7 to 8 muffins

  5. Bake at 350 degrees Fahrenheit for aprox 18-20 mins

  6. Let cool completely
