Krumkake- Gluten Free

Ingredients

1/2 cup melted butter
3/4 cup sugar
3 eggs
1/4 cup water
1/2 tsp vanilla
1/8 tsp salt
1/4 cup brown rice flour
1/4 cup potato starch
1/4 cup corn starch
1/2 tsp xanthan gum

Instructions

1.In a bowl combine 1/2 cup melted butter and 3/4 cup sugar
2. Add 3 eggs and mix well
3. Add 1/4 cup water, 1/2 tsp vanilla and 1/8 of salt if using unsalted butter.
4. In a second bowl combine 1/4 cup brown rice flour, 1/4 cup potato starch, 1/4 cup corn starch and 1/2 tsp xanthan gum.
5. Combine the bowls and mix well. Let the batter sit in the fridge for 15 mins.
6. Warm up your krumkake iron/maker, brush with coconut oil. Pour 1 tbsp of batter on the preheated iron and close the lid. I like heat setting 5 on mine but you will need to experiment with yours. Mine has a green light that turns on when it is ready.
7. when lightly browned remove the krumkaka and roll it onto the krumkake cone.
8. Repeat steps 6 and 7 until all the batter is gone.
