Plum Cake- Gluten and Dairy Free

Cake batter Ingredients
1/4 cup melted coconut oil (you can use melted butter or another oil if you prefer, I used canola oil in the video)
1 egg
1/2 cup white sugar (take 1 tbsp out and put aside for the topping)
1/2 cup brown sugar
1/2 tsp vanilla
1/2 cup coconut milk (you can use any type of milk you want)
1/2 tsp xanthan gum
1/2 tsp baking powder
1/2 cup brown rice flour
1/2 cup corn starch
1/2 tsp salt

Approx. 9 plums

Topping
1/2 cup brown sugar
2 Tbsp brown rice flour
2 Tbsp corn starch
1/2 tsp cinnamon
2 Tbsp oil

Instructions
1. Combine 1 egg, melted coconut oil and the sugars in a bowl. Add coconut milk and vanilla, mix well.
2. Add the brown rice flour, corn starch, salt, baking powder and xanthan gum. Mix well. You can use a whisk to get the lumps out.
3. Pour the cake batter into a lined 9"x9" baking dish.
4. Pit and slice approx 9 plums.
5. In a small bowl mix together the brown sugar, brown rice flour, corn starch, cinnamon and the oil for the topping. Sprinkle on top of the plums.
6. Bake at 350 degrees Fahrenheit for approx 35-40 mins
