Pumpkin Loaf- Keto, Gluten Free, Paleo Option

This tastes and has the texture of a cross between pumpkin pie and a loaf.

Ingredients
3 eggs
1/3 cup melted butter or coconut oil
2/3 cup water
1 1/2 cup pumpkin puree
1/2 cup granulated monkfruit
1 tsp vanilla
1/4 cup coconut flour
2 Tbsp psyllium husk
1 1/2 tsp baking powder
1/4 tsp salt
2 tsp cinnamon
1/2 tsp ginger
1/2 tsp nutmeg
1/8 tsp clove

Directions
1. In a bowl combine 3 eggs, 1/2 cup granulated monkfruit and 1/3 cup melted butter or melted coconut oil
2. Add 1 and 1/2 cup pumpkin puree, 1 tsp vanilla and 2/3 cup water. Stir well
3. Add 1/4 cup coconut flour, 1 and 1/2 tsp baking powder, 1/4 tsp salt, 2 Tbsp psyllium husk, 2 tsp cinnamon, 1/2 tsp ginger, 1/2 tsp nutmeg, 1/8 tsp clove. Combine
4. Pour into a parchment lined loaf pan, smooth out the top
5. Bake at 350 degrees Fahrenheit for 1 and 1/2 hours.
6. let cool completely before cutting
